Moooo....

So Sunday I found myself in the Dairy Section at the Super Market.
That's a first in the past 2 years.
And I wasn't just all "remember the good ol' days when we used to buy this stuff?"...I was buying stuff. 
Dairy stuff. 
For my kid with the Dairy Allergy. 
To ingest.
On purpose.

Yea, you read that right. It was finally time for 'J's Dairy Food Challenge (remember this post when we learned the good news?). Luckily this wasn't our first time at the Food Challenge Rodeo since we did this all before for his Tree Nut Food Challenge. But this time things seemed different. The stakes seemed higher somehow. I found myself eagerly anticipating this day & dreading it all at the same time. So many "what if"s. I found myself wanting him to pass not to fulfill a fantasy of us all sitting around on a brisk Fall day eating my homemade tomato soup & grilled cheese fresh off the griddle, no, I wanted him to pass more than anything so that he didn't have a reaction. The thought of us intentionally giving him something we very well know he (at one point) was extremely allergic too & him needing to be stabbed in the thigh with an Epi Pen & the Allergist rushing in to do whatever he needs to, or worse, calling the ambulance. That thought never left my mind & made me sick to my stomach. This wouldn't be an "oh no, I had no idea there was milk in that!! hurry get the pen"  kind of situation, but a "here kid, drink this milk & eat this yogurt...let's see what happens..." thing & I was terrified of the 'see what happens' part.

So we got up yesterday (after hardly sleeping all night...) & tried to get him to eat breakfast & drink extra milk since he couldn't have anything but water after 9am & the testing was scheduled to run until almost 4. Then we left & remembered on the way that I had forgotten a minor detail...the freaking bag full of dairy products sitting in our fridge! So we stopped at a market & restocked. 
I like to be a very prepared person. Which means I packed the laptop with 2 movies, plenty of cars, a new car coloring book & travel watercolors. I also thought ahead to the possibility that he wouldn't want to drink milk. I don't even drink milk, so why should this kid want too? So as back up I brought a small chocolate milk & a yogurt. I had to stop myself from bringing butter too, hahaha! After waiting a LONG time to find ourselves in this situation the last thing i wanted was for him to not eat or drink ANY of it. 
The winner (and saving grace) of the day was the yogurt. It took some prompting of "Dada" eating it too for him to finally relax & snack a bit. 

I assume most people have not, nor will ever, find themselves at the allergist enduring a food challenge. So I will give you a little insight as to what exactly it is. They first do some preliminaries with weight & pulse, then rub a small amount somewhere from your chest down. This time we did it on his calve. Then we wait 15 mins & wait to see if there is any reaction. Then they do a small scratch test where they poke you with a "control" prick & an "allergen" prick to see if your "numbers" are still low. Next they rub a small amount on the face, wait 15 mins, check for reaction. Then some milk around the mouth, but not on it. Wait 15. Then rub a little on his lips, wait 15. If he passes all those without any reaction then we move from the skin testing to ingestion. 
Dun Dun Dunnn.
First he gets to taste a teeny tiny amount, wait 15, check for any oral swelling, etc.
Then a little more (this is where the yogurt saved the day. He wanted nothing to do with a liquid syringe or medicine cup, even if there was chocolate milk in it!).
We slowly increase the amount every 15 mins until he is eating a full ounce. Then repeat the ounce a couple times. Finally he gets checked out by the allergist & he give us the all clear!  
But, there was this one time we had a slip up & he (literally) licked a piece of meat that was in a stew that was made with a spice packet that contained powdered milk  and 6 hours later he had some serious stomach pain to the point he was thrashing & screaming. 2nd scariest night of my life. Well, because of that, he was at risk of having this delayed reaction so we had to keep a close eye on him the rest of the day & night. He did get really upset after he took a late nap, but we figured out that he was gassy from the dairy & worn out from a long emotional day. 
We woke up this morning & knew we were in the clear! Finally! No more worrying every time he is in the care of someone else. No more fearing that a friend or cousin will try to be nice & share their milk or snack. No more packing a cooler or bag full of food every time we go somewhere else "just to be safe". And no more fearing that damn Epi Pen. 
We were instructed to start out slow, first with cooked items...then SLOWLY work up to cheese & such. But truth be told, we aren't big fans of dairy anymore. After being Dairy-Free for so long, & eating Paleo (which we don't do as much as we did before, but still on occasion) we realized you don't really need it. I've been making delicious dairy-free meals for years. We have cookies, & cupcakes & ice cream just like everyone else. The only thing is cheese. Can't find a good fake cheese & never will. There is no real substitute for cheese & anyone that says differently is just lying to themselves...& you, how rude. 
Then we discussed little 'A' & that reaction he had last time I really ate dairy. So I am on doctors orders to eat dairy for 3 days & see if he reacts again. If so, then we do a scratch test in the office & see what's up.
I guess I got a little excited, seeing as how we left the appointment & I found myself at Sonic 15 mins later ordering a CHEESEburger & Oreo Sonic Blast. Then later while on a fantastic "sister date" with my sissy I had a Chai Latte with skim milk. Apparently my body didn't get the memo I was embarking on this dairy filled journey & kept me up all night as a pay back. Ugh. Today I hardly had any dairy, so tomorrow I'll have to pump it up a little. There needs to be a bulk in my system so it can pass to him & be big enough to cause a minor reaction. In his case: hives, extra spit up, diarrhea. Fun. Fun. Fun.
So after driving by & staring longingly at an adorable little Pastry Shop on Main Street for YEARS, we finally strolled on in as a family this evening & ordered without hesitation. Ok, I take that back, there was MUCH hesitation! 
A- there were SO many choices!! 
B-I didn't want to overload him, and
C-I was completely out of the comfort of this world we have known for years & a little terrified. 
In the end I chose a Dark Chocolate Chunk cookie for 'J', the hubby picked out a GIANT eclair & I stuck to a tried & true favorite...a cannoli. It was surreal, to say the least. Us sitting outside a PASTRY SHOP sharing yummy treats like so many other families we see. As long as little 'A' passes the test, then it's a reality we can get used to. And if not, no biggie, we know our way around the Dairy-Free route pretty well by now ;)

*congratulations on making it this far!! Sorry this was dreadfully long, but hey- If I had to sit in a doctors office for 4 hours with a tired/hungry/cranky toddler & baby, then it's only fair that you have to sit in your seat for a few minutes reading my story. But seriously though, thanks for sticking it out champ.

So today is yet again 20 Chore Tuesday, but I have a busy morning/afternoon & don't see that happening, so I am making a condensed list of things I would like to get done today- no pressure.

There, 11 things. Not outrageous, & not lazy. And I am also highlighting & cutting my mums hair, so that's a chunk of my morning, but I'll see what I can do. Again, no pressure....

I have a nifty little App that I LOVE called Cozi. It's a full family organizer that you can access from multiple phones & computers so everyone can stay connected. And of course it's FREE, cause thats pretty much the max I'll pay for an App. Trust me, "The list" looks much nicer on there, but the screen shots I took on my phone had a lot of overlap, so I decided to just do a quick rundown. As usual I will post progress pics throughout the day on Instagram & will update at the end of the day here to let you know who won the battle....Me or the List... DUN DUN DUUNN.

Well, at 2:30pm I officially finished kicking some house cleaning arse!! I completed all 20 tasks & a few extra in the process. *KA-BAM* Take that, 20 Chore Tuesday! Here's a little picture* proof that I didn't just cross stuff off a list...I actually did the stuff I crossed off.

Breast is Best

In honor of World Breastfeeding Week, I was inspired by Emily at Joyful Abode to share one of my favorite pictures.
I am so glad to have captured this moment with little 'A'. He was less than a week old & right after setting up a shot during his Newborn Photo shoot with the amazing Anne, of Anne Kern Photography, he was hungry. So we stopped right there & I stood & nursed him. Then it hit me, why aren't we taking these pictures too? This is an important moment for my son & I. So I asked & she delivered. This is, by far, the prettiest of all my nursing photos with my babies. For instance I didn't take it myself so 1/2 my body isn't cut out or anything. And I love how soft & natural it is, with us skin-to-skin wrapped together as one. I actually have this print hanging in a frame in his nursery.

I am lucky enough to have photos of the very first time I nursed both my boys, as well as a photo from the very last time I nursed 'J'.
 It is definitely not as pretty as the one above, but beautiful in its own right. I had made sure the camera was on the nightstand the night before, & woke the Hubs up to take it that morning, Easter 2011. I look like I was run over by a truck & could barely open my eyes, but there is so much love in that picture. And sadness. I was actually really sad to end our nursing relationship. I did it on recommendation from my OB so that we could start trying for little 'A'. Because I have an extensive medical past that made it very difficult to get pregnant, he felt I needed at least three months post nursing to level out my hormones before we even started trying. We were VERY wrong. I slowly weaned 'J', then finally got my cycle back a month later, & got pregnant right away. It makes me sad to think back on it, knowing that it wasn't necessary to stop nursing him that soon. I will not make the same decision this time around. I won't make that choice myself, I will let 'A' make it with me. It may be my body making the milk, but its his body that needs it.

NOT SO FUN & GAMES:

  •  We had a scare Saturday Night. 'J' woke up crying & when we checked on him his face & lips were starting to swell & he was drooling like crazy. Our first thought was "Grab the Epi-Pen, he's having an allergic reaction!" quickly followed by "I don't want to have to stab my son in the leg!!!" then "How did he get dairy?!?! He's been asleep for two hours!!". After doing a quick assessment we decided to try liquid Benedyl first. He quickly passed out so I took him back in the tent & lay down with him. I could NOT TAKE MY EYES OFF OF HIM. I took picture after picture to compare to see if the swelling was going down.
  • Everyone else went fast to sleep, I on the other hand did not. I lay with my hand on his chest most of the night to make sure he was breathing. Even when hours had passed & he seemed to be doing a lot better, I just couldn't shake it. We have been dealing with this allergy his whole life, that is the closest we ever came to using "the Pen", & it's something I never want to have to use on my child. Ever.
  • We woke up in the morning & embraced a new day. Thankful for the blessings in our life. Thankful I didn't have to use "the Pen". 'J' was in good spirits, & then about an hour later we started to see some allergy symptoms quickly returning. *LIGHTBULB MOMENT*, its something at Camp!We had just lit the fire. The Wood!!! There was something in the wood, when burned, that was getting in the air & causing an allergic reaction in 'J'. We gave him some more Benedryl & tried to keep him occupied away from Camp while also trying to pack camp up. I finally realized what a silent blessing it was that 'J' has food allergies, otherwise we NEVER would have been prepared with Benedryl (& an Epi Pen) within arms reach & things would have went from bad to worse VERY quickly. Thinking back his eyes started getting red/watery & his nose started to run saturday evening (you can see it in some of the pics of him above), but we thought that he had just gotten smoke in his eyes & they were irritated. Oh how wrong we were.

FRIENDS & FAMILY:

  • Sitting on our favorite spot at Camp Rock, the first of many annual trips to come :) You know those non family people in your life that are well deserving of "Aunt" & "Uncle" to your kids...these are those people. They may not be blood, but that doesn't mean they aren't family.
  • And of course I had to toss in a pic of little 'A', please don't sue me if your ovaries just exploded...he brings a whole new meaning to the phrase "If looks could kill"...

Cookin' in the Kitch {Oven Roasted Veggie Beef Stew}

Lets be honest, I really have no idea what to call this. It was more of a "hmm, I wonder if I take this, & do this, & then add this...what will happen in the end?" And now I can tell you, what happened is this: we ate the crap outta this.
This idea originally started brewing when I was getting us ready for our Camping Adventure(i know, i know, I will definitely have a post by the end of the week!). Each couple/family was assigned a meal to provide for the Camp & we saw that one of the meals was set for Hobo Pizza Pies. The only issue with that is that 'J' can't have cheese. We were left with two options; A) I drive out to the specialty store about 20 mins away & get dairy-free totally gross "cheese" or B) we make his with just sauce & pepperoni.
Then it hit me, why does it have to be pizza? I remembered going to Camp as a Girl Scout & we learned how to make foil pocket dinners on the fire. Basically ground beef, some mixed veggies, sliced up potato & seasoning tossed onto a piece of foil & folded up like a pocket. Toss it on the fire, let it cook, flip it over, cook more, open & eat right out of the packet. BOOM, dinner is served.
So I thought to myself, ok ok- I said out loud to myself, I bet if I made some ground beef & tossed in diced potato & mixed veggies & sauteed it up beforehand, we could make some meat PIES. So that's just what I did. Only I did it really quick with frozen veggies & canned diced potatoes. Over all they were good (except for the part where they were burned really bad in our 1000* fire), but I'm not really a canned/pre-packaged kinda gal. Not that there is anything wrong with that, well to be honest there is... like a crap load of added shit/preservatives that you don't need to be ingesting..., but to each their own, right?
So last night for dinner I decided to do it right. And man was it right.

I gathered:
1.5 lbs fresh ground beef (from our market)
1/2 organic yellow onion, diced (Trader Joe's)
3 cloves (or more to taste) garlic, minced
fresh Thyme (about 1 TBS chopped/5-6 sprigs)
fresh Sage, about 1 TBS chopped
a pinch of fresh Oregano
Saute' diced onion in Olive Oil until soft, add garlic & some S & P.
Add ground beef & fresh herbs, cook till brown.
a bag of Tiny potatoes, halved (TJs)
about 5 organic carrots, cut into sticks (TJ's)
1 large zucchini, cut into sticks (gifted from a friends garden)
Drizzle with Olive Oil, toss to coat. Season with S&P & roast in 400* oven for 20 mins
Same prep as above, only these roast for 30-40 mins
(Note:I baked them at the same time. Also Note: I did the large veggies in stick form so that I could put some aside for little 'A', then dice them after they roasted but you can cut them differently, keep in mind the cook time may vary)
After the veggies are roasted, I diced the carrots & zucchini into smaller pieces & added all the veggies, plus some frozen peas to the meat mix. Then add 1cup organic beef broth (TJ's), bring to a simmer. Add 1 TBS of cornstarch to a little cold water, stir to blend. Add cornstarch mix to the pan & boil 1 minute. And that's it!
So you see, it's not really a stew, but it's coated lightly in gravy so is it then, by default, a stew? Your guess is as good as mine. What I CAN tell you, is that this rocked our dinner socks off.

*You could make this Paleo by removing the peas & adding some other veggies, like mushrooms or squash. Replace the potato with some sweet potato or serve over mashed cauliflower. Replace cornstarch with any of the following thickeners: Arrowroot flour, coconut flour or pureed onion.

As part of our Daily Life Skills Learning I had 'J' help set the table :)

Family Ties

We have been doing a weekly Sunday Dinner at my parents house (read: my childhood home) for several years now. We initially said that when the kiddos all came we would scale back to maybe once or twice a month, but then seeing them all together for the first time we realized that your first friends are usually cousins & couldn't pass up on all the memories they would make at these dinners. Every once in a while one family doesn't go for whatever reason (working on house project, bday party elsewhere, etc) but for the most part we all still gather every sunday to sit & eat a meal together :)

And this quick little video that The Hubs shot this past Sunday shows exactly why we do it...
