Cookin' in the Kitch {Marshmallow Cripsy Treats}

I don't know if you can even call this a recipe.

There isn't much to it:
1-2-3 EAT. or in this case melt-mix-press-EAT
So simple a 2 year old can do it, well, everything minus the stove part.
Don't believe me?
I'll prove it...
Melt in pan
 Add marshmallows to pan, stir until melted
 Pour melted mix over cereal, stir 
 Press into pan
Eat & Enjoy!


NOTES-
-I used Marshmallow Mateys in place of Lucky Charms Cereal.
-The size of your pan will determine the thickness of your bars. I used a 12x12 cake pan & they were about one inch high. Next time I'll make a double batch so they are thicker.
-You could also add multi-color sprinkles on top...that wouldn't be a bad thing, that's for sure.
-Stop reading the fine print & go make these already! You know you want to....

Cookin' in the Kitch {No-Bake Peanut Butter Cup S'MORES}

You know those times when you're sitting there eating your Brown-Bag lunch or dinner or lovely little picnic that you packed & as the meal comes to an end your stomach says all innocent like "Oh man, I wish I had a s'more right now...that would be soooo good. Just the perfect end to this half-ass , err, I mean, wonderful meal you made me. *Sigh. louder SIGH* But you didn't pack one....that's really disappointing..."

What's that? You don't recall ever having a conversation with your stomach in which it made you feel like a failure? Oh...well, neither have I. I was referring to a friend. Yea, this girl I know... Her name's...Pat, YEA, Pat, that's right. I probably should have mentioned that before. Sorry.

Anywho, moving on....

So what is one to do if one finds oneself in such a situation?

Pack up a s'more for dessert you fool!
Ok, Fool was harsh, I'm sorry, I take it back. I just get real revved up over s'mores. I don't know what it is lately, but I can't seem to quit them. And then I go & realize what I should have realized a long time ago. You can take them with you!
No camp-fire?
No worries!
No microwave?
Not an issue here folks!
Why?
Because you can do them No-Bake {insert harps playing & angels cheering}

And THEN I go & take it a little further...& make it how I REALLY like it...
Peanut Butter Cup Style. That's right, you heard read me. What? Have you never substituted a Reeses Peanut Butter Cup in place of a chocolate square?!? How can this be?! For that, folks, is how you really eat a s'more.
Ok, enough chitchat, I'm pretty sure I had you hooked 93 words ago. So lets get down to biz-nass, shall we?

Ice Cream...& don't forget the Marshmallow Cream...
I think you can handle that, right?
Load that graham up, don't hold back!
Try not to bite your fingers as you

Camping Out, a look inside the tent~

The invites went out, the guests arrived, the party was a hit!

Now here's a closer look at all the little details, the behind the scenes of Camp Jammer. I should mention that we didn't have a big budget for this shindig, but we always enjoy making, thifting, recycling whatever we can so the $0 small budget wasn't really a concern. The majority of the money was spent on food, as is usually the case. Speaking of food...

Oh yes, a baking combination that is S'MORE right than you know!
And here's how you make it!

I made Old-Fashioned REAL lemonade
& pre-filled Mason Jars ready for the taking.
We also offered Water & a cooler full of Beer. 
-Roll cutlery in a napkin
-Take a plate
-Punch a hole in the side
-Attach napkin roll with ribbon
-Sit back & marvel at how smart people will think you are...
It wouldn't be REAL camping if Duct Tape wasn't involved somehow...
How could I NOT make this sign when I had giant
pieces of poster board lying around the house?!
Thread+needle+ballons=Easy Ballon Garland!
No Camp would be complete without a Swimmin' Hole
And don't forget about Arts & Crafts!
We prepped our collection of milk cartons with white spray paint,
cut a hole in the side, hot glued on popsicle stick shingles
& attached a twine loop to the top.
Then the kiddos got to paint their new bird house, it was a big hit!
We even included a bag of seed to take home :)
Sheet Fort:
Bags full of old sheets- check!
Rope & twine- check!
Ladder- check!
Clothespins- check!
Feeling like a kid again- Check!!
We topped of the festivities we a movie outside!
If you can get your hands on a white sheet
& a projector then you are good to go!
'J' even had his own little camping chair to sit in :)
And since it was HIS birthday we
watched his favorite movie, Cars
And last but not least, the Kiddie Camper Packs!
At "check-in" each Kiddie Camper recieved:
a personalized Camp shirt (tshirt was thrifted, then I jazzed them up)
a personalized water bottle (Michaels Crafts- $1)
a bubble wand/glow necklace for the older kids (Dollar Tree)
binoculars (Dollar Tree)
chalk (Target Dollar Spot)
snacks: AirHead, raisins, fruit snacks
Bandana (Handmade by my mum)

A.MAZE.ING

Gotta love when the Kitchen Gods smile down upon you & all the ingredients to a truly delectable treat are nestled in your tiny pantry...just waiting for you, waiting for their chance to be turned into to something A.MAZE.ING!

Tonight after dinner, while Hubby was putting 'J' to bed, I whipped up some Double Chocolate 'Cakies' for dessert. Hands down, one of the tastiest treats I have made/had in a while. Big Ups to Pinterest for leading me to this little Gem. Although I made two changes- I used chunky Almond butter instead of smooth & I used Enjoy Life Allergen Free Chocolate Chunks, but other than that stuck to the SUPER easy recipe.



Not gonna lie, folks... I had more than One...a LOT more...

I'll look away as you wipe the drool off your keyboard...

Let's Eat!

Since we are fairly new to the Paleo Lifestyle*, I thought I would give you a peak into our new world :)

Here is this past weeks dinner Menu~

Monday:
Paleo Crockpot Meatballs over Spaghetti Squash with a side salad

Tuesday:
Crockpot Roasted Chicken & Gravy with mashed cauliflower & honey coconut carrots on the side. *Also had mashed potatoes for our dinner guest.

And broiled fresh pineapple topped with mini chocolate chips & toasted coconut, drizzled with honey with an allergen free brownie on the side :)

Wednesday:
Homemade chicken nuggets with roasted lemon Garlic Broccoli and apple sauce
Thursday:
Pork Chops topped with Spiced Apples & Pears, seamed spinach & a salad on the side

Friday:
Salmon with roasted zucchini & honey coconut carrots on the side

Saturday:
Marinated Char-grilled Steak topped with Butter Garlic Mushrooms, with mini zucchinis & Garlic Roasted Sweet Potatoes on the side
 
Sunday:
Easter Dinner(s) with our families :)
{We followed the 'diet' & ate only the meats & vegetables offered that were fresh/not processed.}




*We do not follow the Paleo Lifestyle 100%, yet. But we follow it about 95%. If we are in a situation where there is not appropriate food available, we will make do with what is offered. Also, we often make Allergen Free Brownies for 'J' when we go to a Birthday Party so he can join in the cake & ice cream fun, and usually end up eating them as well.
